I have heard one or two friends say they have tried it for tenderizing their meat, but never for browning it any better. I use corn starch for browning some of my stir-fry concoctions, and also for thickening my sauces or gravies

Same here. I've been using Hill Country Fare meat tenderizer that has Pepin as the active ingredient and it works well enough that I haven't bothered trying baking soda.

I'm not sure I totally buy into it, but might try. For a lot of my vegetable or soup recipes, I want the ground to have some structure and texture. If it is 80/20 I don't like all the fat so I cook it, drain it, add 2 cups of water and cook again to remove the grease, then the final drain. To me it is better, and certainly freezes better also!!

Hmm , use some corn masa and get the same effect,maybe ? Its just like flour on a Roux.
Btw that chili had beans in it.... maybe a new york recipe dead_horse To all who like beans in chili no disrespect.

I use a very small amount of baking soda in the rub I put on chickens the night before I roast them. Seems to make the skin nice and crispy, but I couldn't tell you if that is a result of the salt in the dry brine, the baking soda, or both. I've also had luck using it on fried potatoes.

I'm not an organic chemistry expert, but from what I understand, a more basic environment (created by the baking soda) helps to break down the proteins in the food into smaller amino acids, which helps them to react with the sugars in the food during the the maillard reaction that causes caramelization (browning). This is why a good German pretzel is dipped in lye before baking to give it the brown color.

The biggest mistake I make when browning hamburger is that I overcrowd the meat into a pan that isn't hot enough. The moisture then pools at the bottom of the pan and steams the meat grey.

The way I fixed it was by preheating the pan ( I use cast iron), adding oil to the very hot pan, and cooking the pre-seasoned meat in small batches, giving it time to brown and get a nice crust (instead of constantly stirring) before flipping it. And I have so much better luck on gas stoves, but that's just a preference.

My momma used it in bread but only when she used buttermilk..


"Baking soda should be mixed thoroughly with dry ingredients before adding liquids because it reacts with water. This will ensure even leavening, the process by which dough and bread rise. Baking soda is normally used alone when sour milk, buttermilk, or other acidic liquid is included in the recipe.May 5, 2019"

Could be, I would use sodium bicarbonate instead. There are plenty of known uses that are good for you.

Do you eat cookies, cake or muffins? Baking soda is used in many recipes for those. You can use to much if you are on a low-sodium diet from what I told.

The toxic does of baking soda is almost 3 times larger than the toxic dose of nutmeg. I'm sure you would be fine. It is used everywhere for baking.

No, I don’t eat many baked goods.
I’m very aware of what “sodium bicarbonate” is as I work in the swimming pool industry(we use it every day)
For your info, baking soda contains bicarb, amongst other things. They aren’t “the same” thing.

I have used it on a few pork recipes before. Patting meat dry and not crowding a pan when you brown meat will help the Maillard reaction as well.
