Still experimenting on what the MIL got in the senior center, and what she really likes. Said she liked Mexican food OK, so looked thru the fridge and cupboard to find this. Red sauce instead of green tonight. Will give her a favorite steak and asparagus dinner tomorrow. Ground pork, diced green chiles, cream cheese, both cheddar AND pepper jack, cumin and S&P, onion and fresh garlic. Some medium sized fresh tortillas. Roasted the garlic and sweated onions for me, then lightly grilled orange and yellow peppers, to leave a crunch. They were already stuffed full of cream cheese and sharp cheddar, but the only pepper jack I had were the slices. Make do with what you have!!

It all looks really great! I would probably add an adult beverage or two, not for your MIL, but for me, and then dive in, face first!!
