Only caught two trout today. Ceviche time.

Couple spec trout filets cubed small
1 large avocado
Flat leaf parsley
Fresh dill
Kalmatta olives
Olive oil
Red onion, minced fine
Fresh garlic, minced fine
Salt and pepper
Half a lemon squeezed

Put it all In a bowl and mix gently

That would be more Mexican style but I love cilantro too and would add.

This recipe is a nice break from the usual tomato/serrano/cilantro variety we get here in SA
