Any of you eat fried plantains, or any plantains at all? I like them when I'm tired of potatoes. Most of the time, I just fry them for a bit in about a half inch of oil, smash them with a beer mug into a patty, then fry them again. These spent a little too much time in the oil, but they're great with just some salt, and I like a squeeze of lime. While classes are going I have a pot of beans made at all times, as well as rice, and fried plantains go great with rice and beans. It's a lot better than ramen.

Love tostones! First had them in Puerto Rico, then later in Costa Rica. Have to be careful, as they will really take on any flavors from the oil; never do them after fish. The mayo/creme based dipping sauces seem to over-ride the flavors for me, so we always use a sweet chili dipping sauce for them at home. Awesome anyway you fix them!!

Chili or garlic sauce sounds really tasty, and butter makes most things taste good, I'll have to give those a go! I did a week in Costa Rica right as the virus was getting big (almost got stuck there, that would have been nice...), and really enjoyed the food and started using lots of their ideas in my own kitchen (I've yet to get tired of rice and beans in any form). Very cheap, quick and filling, and works well with leftovers. Between that and an occasional hunk of venison now and then, its helping me save for the important things in life, like hunting trips, retirement, and a house (in order of importance ) I also liked that beer they had down there, Cerveza Imperial.

I like them with a Spanish steak cooked in red sauce of choice with onions and peppers, The tostones cooked on the side eaten with the sauce make a great combo. Another dish made with them I ate in Puerto Rico was called mofongo. Some road houses would have it along with asapao of various kinds for late night travelers/drinkers. Since I was in the navy I usually qualified as both.

Look good but something I've never had. The one and only time I had them I was less than impressed.... Looked nothing like those!

They are big green or, if ripe, yellow/black bananas you see at the grocery. 2 ways we Cubans cook them. Tostones get the greenest ones you can find peel and slice cross ways into 1" pieces, deep fry for 3-4 minutes smash, deep fry again until edges are crisp. The ripe ones cut on the diaganol and cook slowly in butter/oil until sugars caramelize.
Serve with a nice garlicky pork roast and black beans and rice...and we'll make you an honorary Cuban, and honorary is lots better than real. To be a real one Castro comes and takes all your chit.

LOL. When I lived in Florida, there was a place that served Tostones nachos. Tostones, covered in shredded pork with cheese and some other stuff. Damn they were good!
