Thinking about taking all my ducks from this year into the processor for sausage. First time ever to do this and got a few questions.....

1. What do you guys mix it with? Pork or no pork?
2. Do you guys get breakfast or links made. Which is better.
3. Do you separate what you got (duck species) or throw it all in together?

I know there's been some talk on here in past, but couldn't find anything. Want to try something a little different this year.

Don't separate the species. You would not be able to tell the difference. Mine usually has all sorts of small game in it. Your other questions are personal preference, but I think the processor adding pork fat is the norm. I always have jalapeño cheese smoked sausage or hot smoked sausage made. I'm liking the hunter links I had made at kubys right now. I might go with that one mostly next time on my all game sausage, but jalapeño cheese sausage is always a winner. I would worry that sausage made from only waterfowl might not be a good texture for breakfast sausage. Unless you like Pâté.

A buddy of mine took some geese to Greens Sausage house to make sausage WOW it was great

Pork or pork fat. I usually add pork butt or some fatty cut. Season to taste. There are a lot of recipes out there for duck sausage. Honest-food.net. As Sniper John said jalapeno cheese is pretty good, although I've gotten to where the jalapenos don't like me much.

I don't separate the ducks per se but I don't put pintails, teal, mallards or canvasback in sausage unless they've been eating clams or mudbugs. Those are usually grilled skin on and the thigh/leg are confit.

1. Yes on the pork. When I do it again I'll throw in some brisket trimmings, too.
2. Links, just my pref.
3. All together. Might even add some venison if I have any left over.

Rumor has it Guy gave up duck hunting and has grown a man bun since he discovered duck sausage...I tried telling him it really wasn't duck but he didn't believe me. lol35

A buddy took a bunch of meat to Kuby's and had them make sausage, it was pretty good and that and jerky is about the only duck my wife will eat.

Kuby's is what I had in mind. Ive taken numerous deer to them in the past. They normally do a good job.

I had Hunter's Creek in Liberty Hill do some geese for me last year as slim jims....just a dried snack stick.

Flavor was really good but the texture was off...kind of like a vienna sausage.

Take it to Kubys on Soverign St off I30 Dallas. I do 25% pork, not 50% jalapeño cheddar and chipotle and get only the smoked links. I haven’t seen anybody that can replicate it, people actually prefer it to venison sausage. Unless they’re canvasbacks or redheads I do not use divers either- not sure if that would matter. It’s a pain in the arse making it I’ve done it before the batch grows and grows… And it won’t be as good as Kubys for the price

The jerky is also very good

A buddy of mine to his ducks to Kuby's and had them make hunter sticks. They were excellent.

I use 40 to 50% pork fat. And what others say, don't separate by species, you can't tell a difference. We'll make brats or breakfast sausage. Then cut down on some fat to keep as regular ground.
