She sent me the recipe so I’m trying it. I’d MUCH rather know how to make my own green enchilada sauce by heart. I’ll get there.

Here's one you could try also, and I should have saved some of my tri-tip for it. Being here in Idaho, everything has to have potatoes (kinda like Texans and beans ). I suppose you could try with chicken too. Green Chile Potato Stew 3 tablespoons vegetable oil 1 1/2 pounds beef sirloin or pork butt, cut in 1-inch cubes 1 1/2 cups diced onion 1 tablespoon minced garlic 6 cups chicken or beef broth 1 pound red or white potatoes, cut in 1/2 to 3/4-inch cubes 2 to 3 teaspoons salt, to taste 1-2 teaspoons of pepper, to taste 3 cups roasted, peeled, chopped Pueblo or Hatch green chiles Heat the oil in a 6-quart pot over high heat and brown the meat. Set aside. In the same oil, sauté the onions until golden. Add the garlic and sauté 1 minute. Return the meat to the pan along with any juices that may have accumulated. Add the broth, potatoes, salt and bring to a boil. Reduce the heat and simmer for one hour, until the potatoes are tender. Stir, serve and top with cheese. A warm tortilla on the side is a must!

Green enchilada sauce is easy to make bro, at least the way I make mine. The same green sauce I make for chips & tacos, I use for green chicken enchiladas. Add water to a pot and bring to a boil. Add one yellow onion (quartered), one head of garlic (peeled), 2-3 jalapenos, & 2-3 serrano's depending on how much heat you like and boil for 5 minutes. Then add 8-10 med-large tomatillos and boil until they start to turn yellow/orange then remove from heat. Don't overcook them or they will bust on you. Let soak/steep for 30-45 minutes. In a blender drop in the tomatillos/onion/garlic/peppers and add 1 chopped up bunch of cilantro, the juice from one large lime (or two small limes), one TS black pepper, one TS salt, one TS cumin, & one TS celery salt. Blend that up good and you're done. You can also make a smoked green enchilada sauce if you're into that, it's good. Just make a small fire with real wood in a Weber Kettle or whatever you have, lay down a piece of foil on the opposite side of the fire. With the vent closed smoke your onions/garlic/tomatillos/peppers until they are soft & have some color, then throw that into a blender and continue as mentioned above. This is the same way I make my smoked habanero salsa.

Wow both of those sound awesome. And dammit. There’s the need for a new blender again. That does seem easy Skinner! Blank, that sounds like the epitome of comfort food! you’re both my cooking heroes! Taking licks of both resides for future. PS-Skinnerback, the spicier, the better baby!

She says she liked it a lot. It wasn’t bad but didn’t knock my socks off like the crack chicken did. It’s missing something. Or it’s just lacking. Maybe next time, I’ll add a little something. It’ll come to me soon enough
