I do love me some Crock Pot pigs. Split pig, ham/tenderloin/half loin, gonna hang out in the slow cooker tonight.

Bed of onions, garlic, and chipotle peppers.




Seasoned with black pepper, cumin, ground chili ancho, pasilla, guajillo, & arbol.


Then coated the meat with Achiote paste cut with Apple Cider Vinegar.


Add chicken broth until it just starts to come up on the meat, cover, and cook on low overnight (10-12 hrs). Will shred and have some good tacos for lunch tomorrow. House smells great and haven't started cooking yet.

Waiting on tomorrow!!

Having it for supper instead of lunch. Meat is shredded, chipotles are chopped & added back with the onions & garlic. Rice & beans are done. Meat is full of flavor, tender, and spicy. It's being attacked by my family right now, so there may not be enough for me to eat LOL. Which is fine with me.
