I do love me some Crock Pot pigs. Split pig, ham/tenderloin/half loin, gonna hang out in the slow cooker tonight.
Bed of onions, garlic, and chipotle peppers.
Seasoned with black pepper, cumin, ground chili ancho, pasilla, guajillo, & arbol.
Then coated the meat with Achiote paste cut with Apple Cider Vinegar.
Add chicken broth until it just starts to come up on the meat, cover, and cook on low overnight (10-12 hrs). Will shred and have some good tacos for lunch tomorrow. House smells great and haven't started cooking yet.
