The wife has lots of family in Hawaii, and this is a staple for them. Here’s my lazy Hawaii/TX fusion using an instant pot - it’s stupid easy and really good. Can easily do the same thing with any slow cooker or smoker and some extra time. Steam is the key here since it’s traditionally slow cooked in a pit wrapped with banana leaves.

Season roast (in this case a deboned ham from one of last season’s sows) with whatever rub you want to use. I highly recommend some Hawaiian red salt or similar - my MIL brought me the ono from her last Maui trip.

Let it rest uncovered in fridge for a few hours minimum

Brown in instant pot, place on trivet, and add a few dashes of liquid smoke and enough water to cover bottom but not touch meat (we want this to pressure-steam, not braise).

Pressure cook for 90 minutes followed by slow natural steam release. ~2 hours total

Reserve liquid, skim off fat, shred pork, and add half reserved liquid back to shredded pork. Use the remaining liquid to steam some chopped cabbage on the stove top.

Serve kalua pork on cabbage with a side of rice (with some soy sauce if desired).

I need to add a picture of the finished product...will have to take it using some leftovers ... confused2 food

Lookin' good brah! I lived and worked for years in Hawaii, and love Kalua pork anyway you fix it. From an Imu underground is huge traditional way, and many wedding and reunion luaus that's the star!! My friends that are still there send me pics all the time to torment me. smile. Truly Ono, "the best"..

Ate some in Hawaii when we went at a luau. It tasted awesome to me, of course it was a tourist type deal so no clue how good or authentic it really was.
