Took all those big chunky tri-tips, and cleaned them up good. Diced them down to 1" cubes, browned and quick seared in the Insta-Pot, then cooked on pressure for 25 minutes with S&P, red wine, and au jus. Browned up fresh garlic in a cube of butter to coat the meat, and added fresh chopped parsley. Mashed white sweet potatoes with some more butter and cream, and good small sweet peas. Didn't really want a salad so just sliced tomatoes and cheddar w/ balsamic glaze. Oh yeah, baguettes with butter and Parm. I'm gonna need to check my oil!!! Nice Pinot Noir to cleanse the palate!!

I have never seen Tri-Tip in the stores. Where do they usually hide it?

A lot of places won't even advertise it, 'cause there's not much of it. When they put sirloins or rounds on sale, take a look in the case by it. A lot of times there will be several packages with just cut ends there, resulting from the trimming to square up the others for cutting. That's what these were.

The only pre-seasoned meats I ever found that I liked down there was the seasoned rib-eyes from Prasek's in El Campo. Not even sure if they still have their fresh meat counter. Used to get a bunch to take out to the deer lease in Uvalde, for our big special dinner when everyone was there
