I killed an older gobbler(10"+ beard) with bow in archery season this year. To me wild turkey are always a bit drier when prepared. I usually cut a portion of breast and flatten it out with a mallet type tenderizer then either chicken fry it or grill it. So I decided to try something a bit different 4 nights ago and then again last night. I took a 3"x6"x2" thick piece of turkey breast (about 8 oz) and flattened it with a tenderizer to allow me to roll the stuffing inside it. All I had on hand to use for stuffing was a mix of onions, peppers, parsley, celery, colby jack cheese and bacon bits(no bacon to wrap it with) that I sautéed all together in olive oil. First I used the tenderizer mallet to flatten the turkey breast. Then rubbed both sides of the fillet with olive oil, added some Killen's S&P Blend and then rubbed in some Chipotle Ranch dressing on both sides. Sautéed the blend for the stuffing in some olive oil. Rolled the blend up in the turkey breast and added the cheese. Then pinned it with some toothpicks. To keep the cheese from running out all over the place in the airfryer I put it on a piece of aluminum foil coated with olive oil. The first time I tried this I set the airfryer on 20 minutes at 370 degrees. This is what it came out looking like. It was good but a bit dry since I was unsure of cooking time. Last night I cooked it for 15 minutes at 370 degrees and it was much better.....good enough I will cook this again. Very moist and tender. Just need to experiment with stuffing and spices. Get some bacon to wrap it with also but must say this was very good without it. It was not dry at all. Sorry about crappy phone pics....they are not the quality of the other guys pics...but it was much better tasting than it looks I promise.

Looks wonderful, I love anything rolled around another stuffing, and it seems to keep a lot of the flavor and juice that is otherwise lost. Agree that wild turkey can be tough as jerky if not done right!!

looks fantastic, better than the left over taco meat and sauce I made last night over rice, and green beans and corn bread we had tonight. Now I am hungry again
