Somebody gave me one of those for Christmas, put it on the smoker. Bacon wrapped, stuffed with cream chees and jalapeño. It was great!

Got a new remote reading, alarm capable meat thermometer delivered today. Gotta fire up some kind of roast soon to test it!!

Bro i just split the top of the pork loin about 3/4 of the way through it and seasoned the inside with regular salt and pepper then added the cream cheese and wrapped in bacon. I always seasoned the bacon with tonys before it goes in the oven...350 degrees for about an hour and fifteen minutes....nothing to it
