The kids blew in from out of town today, to move all the rest of the MIL's furniture and belongings from the senior living, over here to the house. Rented a U-Haul to do it in one trip. Refused to let me help, so I made them snacks for after the work. Thank you kids. smile Refrito/cheese/sour cream stuffed poppers w/ bacon spears, shrimp, and little taco boats, with beans and cheese.

Nah, my nachos are loaded chips, cheese, beans, jalapeños, shredded beef and chicken, broiled lemon garlic shrimp, sour cream, guac,, pico Much better!!

That was before - Those were cold and bacon frozen. before going into oven... After - they're soft and cooked smoking' hot, and we wrap them in steamed tortillas.

You know there’s no such thing as a bad popper, and sometimes I like to mix them up. I love my popper rack and the corer to make these. Halved is good with either beans or cream cheese/ cheddar in, lay on a shrimp or sausage and wrap with bacon. Dove breasts or deer tenderloin with pepper and bacon is awesome too. Another is just cheese mix, dredged and fried. If you use raw bacon, you can grill or bake -just takes a little longer.

You guys saw I cooked up a few pounds of bacon the other day, and put in freezer. That works so good for these. Either chop up and put in the mix, or leave long. Take a strip and halve it, then split length ways. While it’s stiff, shove it down into the popper. Packs the goodness all the way down.

Mix all your soft fillings together, put in a Ziplock bag, and cut off the corner. Use as a piping bag and fill up the popper, mess free. Then it’s easy to squirt the left-over mix into any thing else. Enjoy!!!

I need one of those. I always cut in half and scrape the seeds out. Then all the cheese filling falls out when I grill them. Adding it to the list thanks for posting.
