Had this tiny little rib roast left over (only 3# and one rib), and figured it would go perfect with last night's left-overs. So hard to cook little ones just right; girls like the done ends, and I like the rare middle. Think I got it just right tho..

Went in for 450 degrees for 30 minutes, then another 40 minutes turned down to 300. Took it out at 125 and rested 10 minutes. They say you can put on too much garlic, but I'm not sure!!!

I forgot pictures the last time I fried the Juustoleipa cheese, so added in pics this time. Nice salty tang, and a good chew.

Ok I have a 3.5lb one in my fridge that I was going to cook tomorrow. I think I will follow your temp and timing.
