I got a Pit Boss smoker for Christmas and while I really love cooking and grilling I'm not the most versed on smoking.
Please share with me (if you don't mind) your smoked brisket, ribs and any other smoked meat recipe you like..

Buy you some cheap Head Country seasoning and BBQ Sauce. (Trust me) Get some good hickory pellets and buy an 12 inch pellet smoke tube for extra Smoke. Use mustard as binding agent for all meats.
Brisket. Trim hard fat down to 1/4 inch or it will not render. Apply mustard coat for binder and then seasoning liberally. Cook on 225 until it hits 165. Wrap with brown or peach paper. Before completing wrap add 1/4 cup of beef broth. Cook until it hits 203 and take it out and leave in paper. Wrap in bath towel and put in ice chest and let rest for 2 hours. Your people will love you.
Ribs same seasoning method. Cook at 225 with hickory for 3 hours. Wrap in foil with parkay butter and honey or brown sugar for 1.5 hours. Unwrap and baste with Head Country Sauce and cooked back on rack unwrapped for 1 hour. Again they will love you.

I also recommend pork butt for your first meat to smoke. Very forgiving cut to practice on.
