A little dinner for the wife and I while the kids are at their Grandparents. HEB had some Prime Grade chuck roast, so I picked that up. Man it came out good. Not sure how true my version is to traditional Carne Guisada. Base is roasted tomatillos, garlic and onion. Blended that after roasting. Made a small chili paste out of a couple Arbol and 4 ancho chili peppers. Cumin, garlic powder, and salt. That’s it.
