Actually thought ahead last night, and got out a package of Hatch chiles that we put up in the freezer. I do love cooking with those Hatch chiles. Had a bunch of rotisserie chicken left, so mixed up with cheddar and cream cheese to make a filling. Layered in fresh tortillas, peppers, filling, and then repeated. Topped the whole thing off with more cheese. A nice Caesar salad and dinner was served. The wife smiled, and said I can make this one again soon!
