Time to make up a batch of venison meatballs. These are good as an appetizer or in sauce over spaghetti. Simple to make and they freeze well. 1lb venison breakfast sausage, 1/4 cup parmesan, 1/3 cup Italian breadcrumbs and an egg. Mix together well and form. We like cooking them on the smoker hot. 350 for 20 mins flipping them once. Enjoy!

After you thaw the ones you freeze, when they thaw out do the meatballs keep their shape pretty well?

I started making these a while back and now my boy wont eat spaghetti unless we make meat balls lol Well he will but he gives me the stink eye for it.

When you grind your venison, do you add any beef or pork tallow with it so it has a little fat in it?

I didn’t grind this batch myself but yes pork for the breakfast sausage. I’ve done brisket trimmings for hamburger meat which is also pretty good.

Check with your butcher, you can get the trimmings cheaper than brisket if they will sell it to you.

That or the parents just got the cheapest fat burger and ran it through the grinder with the venison to make burger that had enough fat to hold together. I like to use bacon ends and have bacon burgers.
