I have a deer quartered in an ice chest that's been on ice since November 21st. I planned on processing it myself and get caught up with work and the kids. It has been iced and the plug is out of the cooler so there's no water standing on it. Would it still be ok to process?

Yes, 3 weeks is max for me if packed well in ice.

Same thing happened to me, my pronghorn went 16 days. It was beautiful meat. But I wouldn't wait any longer if I was you.
