I've been on a Pho kick using Shiritaki Noodles and I have to say they rock IF you prepare them properly. I hot/cold rinse the noodles in a collander then put them in a non-stick skillet on medium heat to evaporate some of the liquid out of the noodles to get them to soak up the broth and seasoning better. They are damn tasty and quite filling and can be used to make stir fry, lo mein, spaghetti, fettucini alfredo, basically any doodle dish that uses a sauce or oil for flavoring.

I used those when I was cutting. They are actually pretty good.

Ranger, there are two brands at my local Wally, one is refrigerated, one isnt, and they're found in two different locations; the orange Miracle Noodle is on the shelf in the gluten free section and the blue Pasta Zero is in the produce section cooler near the guacamole, kimchi and tofu.

It's important to remember that the key to making them taste good is to drain & rinse thoroughly then put them in a non-stick skillet to evaporate some of moisture. Then put them in the sauce to soak up the flavor. Otherwise they'll taste like a freshly washed vagina; no taste, no smell, just slippery.

Pasta Zero is the one I started eating when I found it at Wally World. They are great. Costco has a box with 6 packets of what is called, “Healthy Noodle” more of a linguini style than spaghetti, but otherwise about the same as Pasta Zero. Love that you don’t have to cook them first if you want a quick pasta dish for lunch. Rinse, drain, heat with sauce, EVOO, etc.

Have also used chickpea pasta. There is a brand called Banza.

And my almost favorite alternative is from Lotus Foods. They are brown rice/millet ramen style cakes.
