Smoked this 12+ lb. prime brisket on the Recteq for 14 hours. It started out weighing a little over 17 and I trimmed off 4-5 lbs. before tossing it on the smoker. This was my 2nd brisket on my pellet smoker and it did not have as much smoke flavor as the first one I smoked about 6 months ago. It was still very good and damn tender after resting in my cooler for 5 hours, but just did not have the same smoky flavor as the first. I think it may have been the Bear Mountain/ Recteq combination of pellets that I had been using. Next one will be with B&B Mesquite 100%. I froze the point after smoking and will make burnt ends out of it in the future.

I still have 4 brisket I got at Kroger for 1.67 lb. about 6 months ago.

I thought about it the other day, but almost died when I saw they wanted $5.99 a pound for it. $110 is a little to steep for me!!!

I would not pay 5.99 either. I got 2 Prime briskets last Labor Day at Kroger`s that were mixed in with the choice that were on sale. I did not realize they were Prime until I got home or I would have looked for more. This is my last one that is Prime. I think HEB usually sells Prime briskets for about 3.49 lb.

Here is a comparison of a brisket I cooked last December on my offset burner with post oak wood and my pellet smoker brisket. I really prefer my offset smoker for flavor but the pellet smoker is so damn easy. I may try putting my next one the offset with until the initial wood burns down, which will take about 2+ hours and then put on the Recteq to finish. Best of both worlds. I will not have to maintain a fire, I will just have to start it.

I use a 10" Forschner/Victorinox chef knife. Oh.... and 26 years experience as a meat cutter.
