Love wild ducks and Chinese Peeking Ducks. Bought a frozen domestic duck once. I failed to get through the half inch of fat. Try it and let us know how it goes.

My mom would make them. She would boil them with celery, onions (both diced} until tender. She used the broth to make cornbread stuffing and baked these together until nicely browned and the stuffing thickened some. I remember she liked to add poultry seasoning also.

No proportions, times, temperature etc as all I did was eat. Made a big meal for a gathering as with the stuffing and a side or two made a lot of food. My grandmother would pluck and burn the pinfeathers off wild ducks and cook them the same way. I liked them others might not.

You probably can find Chinese duck recipes on line.

I had had Krispy Duck several times in China. Only thing was that they fry the whole duck beak feet and all. Reminds me of the time we were in Shanghai. Myself and another crew member went to the zoo. There were a bunch of school children there and they were eating fried baby chicks on a stick.

Took this pic in Singapore. Braised duck heads are a thing there. Had a whole table of loud jabbering Chinese guys sit next to me one night and they ordered a big bowl of duck heads. They had pecan cracker looking chingaderas and little hammers. They’d crack the heads open and lick all the brains out, then suck the eyes and the meat off of the heads. Some would eat the bills. Smacking and talking with their mouths full the whole time. Disgusting f******.

Oh, and don’t forget the chicken feet for desert.


The roasted ducks were very good though.

I smoke a domestic duck every year for the holidays, either at Thanksgiving or Christmas. Not as good as smoked goose, but very good.
