I don’t think it ever got above freezing today, so perfect excuse for hot and hearty food. Vegetable beef noodle stew. The boss wanted to try this new live butter lettuce and mini tomatoes. Pretty simple, but sure filling!! smile

Wow, putting me on the spot, as I don’t really have a “recipe”. We like to just wing it with what’s in the fridge. The wife and I cheated and used the Insta-Pot for most of it. Basically just 1-2# of cubed beef or venison browned in some oil, then the mirepoix (diced carrots and celery, I have to leave the onion pieces big so the wife can pick them out later). We throw in a can of mushrooms sometimes, or sliced fresh if we have them. Cubed 1 or 2 potatoes (Yukon Gold or new seem better than the starchier Russets or Norkotas, they’re better for baking or frying because of higher starch). Add a container of beef stock, salt and pepper, a little minced garlic. A teaspoon of balsamic or red wine vinegar gives it a little zing.

Turn on the pressure setting for 8-10 minutes, depending on your machine. Will take about 15-20 to heat up, then cooks, and we use the natural vent mode. Cook your pasta or egg noodles separately so they don’t get mushy. Add to the mix. I like to make some brown gravy to add, which increases the creaminess. You could also use cream of mushroom soup for that. I know a couple friends like to thicken with cornstarch, but I’m never any good with that. Add more salt and pepper to taste when it’s done
