I've made quite a few, when I don't shoot them in the neck.

This is only half a neck from a 230 lb buck, used the other half for sausage.

Seasoned with black pepper, fajita seasoning, cumin, ground chili ancho/pasilla/guajillo/paprika...then coated with a can of chopped up chipotle peppers in adobo..placed on a bed of red onion & garlic with a little Knorr & 2 cups of water in the Croc Pot for 10 hrs.

Will pick/shred/re-season & make tacos for lunch tomorrow. In progress....

That's going to be good . I know a lot of guys that do a half a$$ job cutting off neck meat just to grind . I really think they are missing out on some good eating using recopies that cook the neck whole .
I like putting one in a pot of beans and slow cook .

Sorry guys, I got busy with Thanksgiving food and never made the tacos. I did shred the neck with 2 forks & re-seasoned it, but stuck it in the fridge. It is tender, spicy, & delicious. No wasted meat on this big neck. Tacos coming soon....

About to do just that brother. We normally make a bunch the weekend before Thanksgiving, but making between Thanksgiving and Christmas this year. Normally have plenty of meat for tamales by now, normally. I recently got kicked off the lease over politics, the other guys aren’t happy about what happened to me, se we are all now currently in the process of pulling all of our stuff off of the place instead of hunting like we should be. Done after 25 yrs. Actually about to go get a trailer load this morning.

Tamales sure sound good though. grin

Food looks awesome. Know all about losing leases. The one we had lined up, and paid for, in Edna got cancelled. Politics and hormones blew up another in Uvalde. Now two best friends died this week. 2020 sucks!!!

Would make a damn good gumbo I bet!

Getting kicked off a lease would be terrible. This is only my first year on a lease and the politics of being on a lease with people who aren't like minded hunters sucks. Sorry 2020 hasn't been great for ya.

Another hate to hear about the lease, I walked away from a honey hole that I had been on for about 30 years, things were changing and I decided it was not worth it anymore.

So can I just boil or slow cook in broth for a couple hours, pick the bones and then spice for usage?

Yeppers, cooking on the bone gives it more flavor. Just let it simmer in the crock pot until it's done (meat falls off the bone). Remove it and pick all the meat off (shred with 2 forks), discard the bones and any other undesirables. Then I like to remove most of the liquid from the cooker, add your shredded meat back, re-season to your taste adding just enough liquid back into the cooker to keep the meat moist & tender. Good stuff.
