the best knife sharpener for a perfect angle every time is
Wicked Edge Professional Series I paid $2000 for one and it weighed 70 lbs Solid alloy alum , metal , CNC machined and highly polished
I don't see it being offered anymore
There's a cheaper version : Commercial Series
If you just want something that works and cheaper
WorkSharp Ken Onion series and buy a variety of belts
Carbide discs work really well and you can sharpen an edge in seconds Just not very finely polished but sharp for cutting
sanding belts work: but if you 're not steady you're ruin that perfect edge on the other side

I have a work sharp, but I think you could probably do just as well, and faster with a cheap belt sander.

If you have a garage with a work bench, this $49.99 belt sander is the way to go. Harbor Freight Belt SanderBut be advised a complete set of different grit sanding belts and a leather belt for applying polishing compound can set you back over $100. However, you will be able to get an extremely sharp edge in less than 5 minutes.

I have a work sharp, but I think you could probably do just as well, and faster with a cheap belt sander. If you can manually hold the correct angle a belt sander would work. That's the problem most people can't.

What is this strop? Never heard of it. Leather. Blade is swiped backwards on it. Like you've seen the barber do to his razor in old movies. When the blade needs a bit more work, you can add some grinding compound to provide a bit more grit. Oops, Didn’t read alway down. JG nailed it. Ah thanks, i had never heard it called by name i guess.
