I've got a whole mess of tenderloins from doing an MLD doe population control hunt. Going to try several different methods of cooking them. Do y'all have any suggestions or favorite recipes?

The quarters and backstraps all went to families that are in need of some extra meat this time of year. Between the tags, harvest logs, and wildlife resource documents it was a heap of paperwork.

Just like beef. I have cooked them on a grill over a campfire. Some never make it home.

Tonight I am making street tacos with some doe tenders I got this weekend. I sliced them up into small medallions and they are currently marinating. Tonight I am going to cook them on the cast iron griddle super hot and fast.

My standard T-loin...season liberally with Fiesta brand steak seasoning. Put in ziplock with just enough olive oil to coat. Marinade overnight. Pull out of fridge to let it come to room temp, then grill on a hot grill to med rare. Optional: top with crumbled blue cheese when serving.

Brush with extra virgin olive oil.
Season with kosher salt,fresh ground black pepper,and garlic.
Grill to rare or medium/rare at the very most.

Mbavo has good idea above, get to enjoy the natural flavor that way. did that on scimitar/red deer last weekend. was enjoyable

Peel and cut an acorn squash into 1 1/2” squares. Season with salt and pepper. Brown in cast iron skillet using olive oil to keep from sticking for about 20 minutes. Put the squash in a bowl. Add a little more olive oil to skillet and get skillet hot. Salt and pepper tenderloins and sear for one minute. Take off heat. Flip tenderloins and cover with the browned acorn squash. Put the skillet in a preheated oven and bake at 300 for 10-12 minutes. Medium to medium rare. You can adjust seasonings to your taste. Let rest for four minutes. Comes out juicy and tender.

I roll each one of them in a ball and wrap with bacon, season with salt and pepper and grill to med. rare over mesquite. food

I like 140 to 145 degrees, grilled backstrap to that this week, Wife loved it.

Smokey that looks great too, will have to try that with the acorn squash.

There are several good ways to cook them already mentioned here. SPG & a hot cast iron skillet or over hot coals is hard to beat. I also like to marinate mine overnight with a little Fiesta Fajita Seasoning, Allegro, & Worcestershire then sear in a hot cast iron skillet. Rest with a little butter on top in a foil tent and man that's good too. Have also made personal sized tenderloin Wellingtons that are VERY good.

Whatever you do, just don't overcook it.

I'm with you on this. I've cooked them every way but the meat, salt and fire is my favorite. Lots of folks who say deer is "gamey" change their mind after having these sliced into medallions once you pull it.

Tender loin being smaller i agree, 8 inch chunk of backstrap still ran a little red fluid and it was real good.

I reversed smoked this backstrap to 130° yesterday, zero blood.

Please elaborate! Never heard of reverse smoked, but i just finished lunch and from the looks of it i could eat a whole bunch of that.
