Wanting sandwiches tonight, and the wife was feeling like brisket. I was brought up to love smoked ring sausage on white bread, with home made BBQ sauce. We compromised and each did our own thing. Don’t think there’s a wrong answer here. I still love sausage with white bread, however I never slice it up like that, I just make a roll over if you will. It's always interesting to see the other ways to skin a cat.

We have a little BBQ joint here in Fort Worth called Longoria's BBQ. They make brisket sausage, in fact they make several products out of brisket. Hamburgers, chili, chorizo, probably a couple I can't remember. They will sell you bulk raw sausage and you can smoke it yourself. About twice a year, for family gatherings, I will buy 8-10 lbs of it. Everyone loves it. David is a second generation pit master and sausage maker. Their Dad perfected the sausage in Gonzales before moving to the metromess. They went to black angus brisket several years ago when the quality of brisket went down hill.

Interesting to mention Gonzales. Just went thru there. One of my favorite towns and areas to drive thru. Love the scenery around there.
