There was a time that I would trim the meat of the shanks, for the grinder. Very tedious, and not much to show for it. I then moved to just tossing the shank in the scrap bucked. However, today I tried something new. I cooked the whole shank (rear legs) and front shank meat, in the crock pot. I used a recipe similar to making a roast. When it was done, very tasty, and some of the better venison I have had. Very user friendly. Thought I would pass this on.

We cooked up the shanks off one this year in the oven at 225 for a few hours with onions, garlic, pepper..... then made stew from it, was some of the best venison stew I have ever had. Helped that the wife is a very good cook.
lf the saying "Liar, Liar your pants on fire" were true Mainstream news might be fun to watch

Good tip Brother Phil. I might try that. I have no love for the shank either, tough meat and full of tendons that take forever to trim. Thanks !

Oso bucco.
Lots of recipes for it out there.
While a whole shank isn’t oso bucco, it can be prepared the same.

I put them in a pressure cooker with onions and mushrooms and a little water. Some of the best meat on a deer/elk if you do it right.
