My uncle raises sheep and I have wanted to see what they taste like for a while now. They are purely grass fed, never touched, and about 4 months old. These two both weighed exactly 70lbs on the hoof.

We aged them in the cooler for a week and tried to butcher them like grocery store cuts

It was mild for sure. Not overly lamb tasting and I think aging it for a week really helped the taste.

Great job on the butchering. I love lamb. I bought a few from a guy in Aledo a few years back for $45 each. He was raising them for the kids to show but the kids got out of it. My Butchering job was not near as good as yours.
