How do you skin and clean one? More important, how do you cook it and what’s it taste like?

How do you skin and clean one? More important, how do you cook it and what’s it taste like? Tis like a MN snowman in the spring time, not alot of meat on the bones... Taste like boiled rack... not much protein...
