So just to start, up this way if you order chili it will most likely have beans in it. Just the way it is up here, with our cold temps a hearty chili is called for.
We're sitting at 24 degrees with 35 mph winds steady and gusts above 45 mph with a dusting of snow. Roads are also closed, I-80 all the way across the state.

I start with elk burger and elk stew meat, both have 10% beef suet added.
I used my own grown shallots and purple onion with my garlic.
I usually put in celery but didn't have any so seeds it was.
Mexican oregano
Chugwater Chile powder mix
cumin
whole canned tomatoes
roasted Big Jim chiles
oak smoked guajillo chile powder
dark red kidney beans and chili pinto beans
one can of water

Simmer most of the day. We'll hit it before we go downtown for a cold one later this afternoon.

Any elk in your hearty chili ?
About 2 1/2 lbs of it in mine.
I can make a Texas style, no beans or tomatoes. Today called for something else.

Forgot to add I smoked the guajillo chiles for the powder myself and took the elk.

Not this year, it’ll just be whitetail, axis, and beef! Elk does make for a fine chili though!

Love bean in my chili. “Chili” is just a flavoring. For anybody that says real chili only has meat, I hope you’re not a hypocrite and add corn bread or crackers, cheese, or other oddities to your “real chili.”
