Potter Taxidermy in Cross Plains did both of these for me. They turned out awesome beyond expectations. Delivery time was long, the price was fair and well worth the wait.

Eat it. The meat is great! We did it like a roast, sans the vegetables, then braised it on a hot cast iron skillet.
