I need some happy, so fired up the 15 gallon cast iron pot a little while ago and giving her a go. I love good head cheese, but have never made it. I'm gonna be up all night cooking and the beer is cold. LOL, the young lady at the register didn't want to touch the heads. She never said anything when I put them on the belt, she just looked at me and started fidgeting with her fingers. roflmao

That is one item I never sold or was asked if I could get. That picture with all of the celery reminds me of an old black man that wanted to buy some pig ears back in the early 90`s when I was a meat mkt. manager for Winn Dixie. He went on and told me how to cook them before he left. He said son, all you need to do is put them in a pot of water with some "onion and ceeerrrrrry".

LOL, my Great Grandma used to make fish head soup in a big cast iron pot in her front yard. When I was a little kid learning how to fish, we'd sit down at Conn Brown Harbor and fill up a 5 gallon bucket full of piggy & pin perch to take over to her. She'd whack the heads off, throw them in the pot, and make a fire underneath. She'd batter & fry the bodies whole and eat them bones & all. I thought she was a witch the first time I saw her stir that pot and all those eyeballs popped up. eek2

Well after a long simmer and cool down, the meat is cooked. Now I just need to pick all the meat out and discard the rest. Have kid stuff to do, then I'll start the next process. More to come....

I don’t remember. It’s heavy but I can pick it up and move it around though. I’ll look it up.


It weighs 70 lbs I believe, not sure though. The 30 gallon weighs 140.

Good Lord man. You may be the only person I have met that likes hog head cheese. That stuff is like crack. Another thing I learned to love with my Granddad. He had a bunch of black guys that worked for him. They would bring it for lunch. Once they saw I liked it they would bring me my own. Lord that stuff is good.

Meat is all picked, only head & tongue meat kept. Everything else discarded (no brains, snouts, ears, skin etc that is traditional to keep). Picking it by hand, I was able to keep it as lean as possible. Too much fat and my acid reflux will have me coughing & hacking and it's not fun anymore. Anyway, all good meat chopped & seasoned up good with parsley & green onion added. Smellin' good.

Broth twice skimmed for fat, reduced, strained, and seasoned.

Two heads yielded 3 loaf pans. Ready to wrap and let that collagen set up overnight in the ice box. Smells good!

It's gonna be good! Has good flavor with a nice kick from the cayenne pepper. I'm heading out of town for the weekend, but will slice some up and take final picture when I get home. It's a lot of work of course, but worth it!

Collagen is so good for us and so rare in our diets. I’ve never tried it (maybe once looong ago) but that looks good.
