My wife used to like going to Olive Garden occasionally for soup, salad, and breadsticks.

I really like the Pasta Fagoli Soup.

I liked the soup so much that I started reading internet recipes in order to make my own. I combined ideas from several recipes and developed my own version.

I am as my Dad would say "As full as a tick" right now after eating a couple of bowls of soup.

A couple of members have asked for the recipe.

Homemade Pasta Fagoli Soup

1 to 1.5 pounds ground hamburger browned and fat drained

1 small onion chopped about 1 cup
1 cup chopped carrot about 2 carrots
3 stalks celery chopped about 1 cup
4 cloves minced garlic
2- 14.5 ounce cans diced tomatoes or one 28 ounce can
1- 15 ounce can Kidney beans
1- 15 ounce can Great Northern bean
1- 15 ounce can tomato sauce
3 cups V-8 juice. I use Spicy V8.
1 Tablespoon white Vinegar
1/2 teaspoon salt
1-teaspoon oregano
1-teaspoon basil
1/2 teaspoon black pepper
1/2 teaspoon thyme
32 ounces beef broth
Dash Worcheshire
1 small can Rotell tomatoes

After browning meat add everything and simmer an hour stirring occasionally.

Taste and correct seasoning as needed.

I suggest cooking pasta separately. After the pasta is cooked add it to your bowl. If pasta is left in the soup overnight, the pasta becomes overcooked.

I also suggest adding one more can of beans. Your choice.

I’ll substitute 1/2 lb of dried beans for a 15 oz can of beans. They’ll cook up quick at a hard boil in a saucepan. I add just a pinch of salt and a dash of garlic. Maybe a small grind of black pepper.
