The blade of this rustic lite skinner was made from a 100 plus year old seat spring off of an old horse drawn wagon. I differentially quenched it to achieve a hard tip and edge yet leave a little flexibility. A lite acid etch brought out the hamon line. The scales are some awesome highly figured mesquite burl with red liners and some mosaic pins. 7 3/4" overall and 3 1/2" tip to scales.

This is a Serbian Chefs knife that I made for a customer here on the forum. Right at 12" overall with a 7" cutting edge. Scales are blue/black G=10 with stainless Corby bolts. Gonna make a good chopper!

I’ve got a a Diamond plated concrete blade I was told would make a really good knife blade. But know?? Could I use that to make a knife like that?

If it has enough carbon content you could. I've never tried a concrete blade but I've heard they don't have a high enough carbon content to harden sufficiently to make a good knife.
