I brined a brisket for 9 days while we were in Arkansas about a month ago. When we got back home I smoked it for Pastrami sandwiches. Now I am reaping the fruits of my labor. This one is on rye bread with homemade Russian dressing, swiss cheese, Bavarian Sauerkraut, bacon and lettuce. I ate with sliced sweet yellow onions, but they were on the side. My favorite sandwich of all time.

The Ruben is, in my opinion, the greatest of all sandwiches. There used to be a place in Jefferson that made an unbelievably good one.

My momma put in in a big crock pot to ferment for a few days. There are probably better and quicker ways nowadays.

whats your brine recipe and how long did it take to smoke? I guess you used a trimmed brisket or trimmed it up good?

Go to the amazingribs.com website and type pastrami in the search box. All of the information about pastrami, corned beef and the rub for pastrami is there. I smoked mine @ 180° in my Recteq pellet smoker till it reached 160° internal. I do not remember how long that took. I wrapped in foil and finished in the oven till it reached 205° internal temp. I used a choice brisket that I had separated the flat from the point and left no more than 1/8 inch of fat layer. I smoked the point for burnt ends. I get my bacon brine recipe off of the same website.
