I stuffed a roasting pan full in different lengths, normally I'm anal about measurements and them being all the same, but this is a test batch so I don't care. My house sure smells good.

My final pictures got removed. That was strange. Guess there was a Mod that didn't like my Forest Gump humor. Fair enough.

Anyway, I'm pretty proud of the final product. Not a bragging man but, it's pretty darn good. These little left overs toasted up nice in the oven.

Like I had mentioned before, I think I'll call this Brush Country Boudin. Not just because of where I live and hunt, but because I also added some native Chile Tepin's to the mix that you can get a hint of. You can taste everything during the whole process. I have learned from this and looking forward to making it better.

I have a couple of vacation properties in Rockport. I'll gladly trade some beers for boudin if you're up for it next time I'm down there.

We get our Boudin from Best Stop. No need to go anywhere else. There's always some idjit from these parts going to gamble or fishing in Venice. Buy it in quantity and vacuum seal. I get the smoked one.

Boudin is one of the best starches to pair with a steak, pork, chicken, fish and/or whatever. In addition, it reheats in the micro-wave in an extremely friendly manner.
