No, I'm not givin', I'm askin'. I want to learn how to make 'Jen you wine' Texas 'no beans' chili. Never done it, so I need a simple recipe to start with. Prefer something that won't require me needing to call the fire department. My stomach can't handle that. Call me P?ssy if you wanna, it is what it is.

First, get yourself some Pendry’s original chili powder and some Smoke n Fire.

Small batch -

One pound ground beef or venison
One pound of stew beef or chunked up sirloin or chuck
One or two big sweet yellow onions
Minced garlic
Beef bone broth
Salt
Black pepper
Cummin
Corn masa
Chopped Hatch green chili (optional)

Put hamburger and stew meat in dutch oven over medium heat
Chop onions, place in large dutch oven after meat is almost done
Add cummin, a little at a time
Add garlic to dutch oven
Add salt and pepper to taste
Add garlic to taste if needed
Add 1/4 cup of Pendry’s original chili powder

Make the stuff in the dutch oven taste right by correcting seasonings. Add chopped green chili (optional)

Add two quarts beef bone broth, cover and simmer.

Taste regularly. Add a tiny bit (1/4 teaspoon) Smoke n Fire and stir. Cover and simmer. Stir and correct seasoning often. When the stew meat is very tender it’s ready to thicken.

Add masa a little at a time, stir, cover, simmer. I have masa in a shaker jar and just scatter masa on the surface then stir. The masa takes some time to plump up, so simmer 15 minutes between stirring and thickening again.

When it’s ready, it’ll be just a little thicker and a slight color change as masa plumps up and adds yellow corn color to broth.

That’s about it for basic chili. Start there and modify to make it yours. No tomato, no beans.

Serve garnish on the side. Chopped onion and jalapeños, cilantro, shredded sharp cheddar, maybe sour cream. If they insist on beans, open a can of Ranch Style beans and serve on the side. Crackers and Fritos optional.

Carol Shelby chili kit is the ticket. Throw the salt packet away and season your beef a little on the heavy side since it does 2 lbs.

This is an old Gebhardts Chili Powder recipe, that we use sometimes, but in our old age we usually use the Williams Chili seasoning mix and just follow the instructions.

Gebhardt's Chili Recipe

4 pounds beef
8 TBS Gebhardt's Chili powder
4 cloves of garlic, minced
8 TBS flour
8 TBS fat
2 TBS salt
2 quarts hot water
2 large onions finely chopped

Cut beef into about 1/2" cubes, do not grind. Mix the meat Gebhardt's Chili Powder, flour, and garlic. In a large pot melt fat and fry onion until tender, then add meat mix and cook for 15 minutes. Add salt and gradually add hot water, simmer for one hour or until meat is tender. Ready to serve.
