I buy my potatoes in 5 bound BaThe individual russets are too big for me.some in the bag are irregular. I use them I'm my version of smashed potatoes. Its a really a simple trick . I bake the potato in the microwave. Let it cool a little, then smash it up in my handle with the skin on. It mis now ready to have the skin removed. It falls right. I add butter, ranch dressing, bacon crumbles, salt and pepper to get the done dear. No peeling and stuffing at the table. This particular one was leftover from a previous meal. Try it. Its quick and easy. Saves waste. Leaves a clean kitchen.

I use golden potatoes for smashed Bill.

Somebody said lately that a mix of red and Idaho made good smashed taters.

I make my smashed potatoes from Golden potatoes. I quarter up potatoes, put in a pot with water, salt, a lot of pepper and one large sweet onion. bring to boil then reduce heat to simmer. When potatoes are soft pour pot into strainer. pour strainer into bowl and start adding real butter and smash potatoes up with butter until a smooth consistency. It is possible that I may add two sticks of butter if wifey is not watching. cant go wrong with too much butter.

Try adding sour cream instead of milk.

A few weeks ago I made some w sautéed onions and mushrooms. Oh my they were fine. Wouldn’t do it all the time but a heck of a change of pace. Highly recommended.
