Brine had pickling salt, sugar, 4 oranges cut in half, 2 lemons cut in half, big onion cut in half, and 3 garlic cloves. Salt and sugar were 6 cups each. About 16 gallons of water of which 4 gallons used used to make the brine starter. Had to heat it up to dissolve salt and sugar, then added everything else and squeezed the citrus as I added it to brine. After 4 gallon mix cools, pour in ice chest with pig, Start adding water to cover pig. Add ice as needed to keep cold. Directions said 24-36 hours minimum, I brined for almost 3 days. Remove and rinse pig, pat dry and use your rub of choice. This time I used Twisted Q, a gift from my daughter. Enjoy

The pig was still frozen when I put in brine. I added ice the next morning as thawing was well underway. I also had two hams from feral pigs in there with the whole pig (split in half). I pulled one of the hams Friday night before and rinsed it, patted it dried and then cooked it as ham steak, served it with scrambled eggs and toast. It was very good and flavor was great. The rest of the pork I rinsed and seasoned with a rub couple hours before smoking. Flavor was great, but this little piggy was not as moist as others. But, my wife and hunting buddy bragged on the flavor.
