Wife usually makes em with canned biscuits and they are excellent with the right seasoning. We had them yesterday but the grandkids were here( not enough seasoning). Added my salt and pepper to my bowl
they were great and she used a whole chicken with it.

That looks great My mom rolls out the dumplings like that and they are the bomb. By far my favorite comfort meal.

We started using a rotisserie chicken. Imparts more flavor and you don’t have to boil the chicken. Use water and bullion cubes for stock. Now my mouth is watering. Need to make a batch

Agree with that, even baked is better than just boiling, plus heavy cream.

Dumplings are where so many people have varying opinions. Honestly, I eat them all, but these style dumplings remind me of more of the German style chicken and dumplings or what you'd get at Cracker Barrel. I grew up on the fat 2-3" round dumpling that had that ever so slightly raw center with lots of chew. In fact I ate 3 bowls last night of that type.

That being said - I cannot stand chicken with bones in my soup. Like, what the hell am I supposed to do with this? Put a 600 degree piece of meat and bone in my mouth and chew around cartilage and such? My wife does it right. Dark meat only (chicken thighs), cooks broth with all chicken parts, shreds, thickens broth, removes all fat and bones.
