yep, starting a week or so back, we start making an extra pan almost every week or two, eat one and put the other in the freezer to use for Thanksgiving dressing. Then we start the following week doing the same in preparation for Christmas. For those 2 holidays, we make up a batch of dressing that is about 6-7 pans of cornbread each, and have very few leftovers.
I still remember having cornbread with honey or cornbread and sweet milk for dessert growing up. Always had cornbread with brown beans too. It was a staple in our home.

I got burned out on cornbread dressing. that can happen ... one of the reasons we only have it twice a year. But this is a recipe that was passed down several generations on my wife's side from her paternal grandfather, to her mother, to me (since I love to cook) and now to my daughter. Totally awesome and different than any other cornbread dressing I have ever had ... I am not sure I could get burned out on this recipe. The unusual ingredient is chili powder and quite a bit compared to the other spices. Almost tastes like a good tamale masa

I had oyster dressing once, it was fantastic! Haven’t found it anywhere else since.

I've made it a few times by simply putting my regular mix over oysters in a frying pan. Similar to this stock photo.

We make a special large batch of cornbread for my oyster dressing. We put chopped celery and onion in the batter and add some poultry seasoning as well. My oyster dressing gets better each year. I’ve been making it every thanksgiving for over forty years.

I’m sure that’s good Bill, but you need raw oysters in the dressing to give up their liquor to the cornbread. That’s where the oyster taste comes from. Add lots of giblet gravy and cranberry Orange relish for the win.

I really enjoy my Thanksgiving turkey and dressing. I none out the the and have a whole boneless breast as well as boneless dark meat. I use the dark meat to make turkey, oyster, and link gumbo from my duck gumbo recipe. I boil the bones to make my stock. I pick off the meat from the bones to make a hunan hot and sour soup like the one in this stock photo. The dark meat and picked meat are frozen first. My kitchen is completely whipped up after dinner.

I think cornbread is kinda personal. I love sweet cornbread in either pan or muffins. With butter and honey there’s nothing better. Bread and milk is pretty darn good! For having with chili (no beans please!) I’ll take regular, or with green chiles or jalepenos in it. I don’t want the sweet to overpower the beef and spice. X2 Chili and sweetened cornbread just doesn't fit with my taste buds, I would rather have crackers. But sweetened cornbread with a lot of butter and honey is a great dessert.

I'm having leftovers tonight. Cornbread is one thing that does not do well in the microwave. I put it in a 400° convection for a few minutes.

What is left over cornbread? I make a meal out nothing but cornbread soaked with butter and honey. I do the same thing with cornbread and milk, always have. Give me a big bowl or BIG cup of warm sweet or not sweet (yes I said sweet) cornbread, cover that with some ice cold whole milk, give me a spoon, and put up a barricade around my area cause I'm taring that up! I prefer sweet cornbread, and yes I'm a Son of Texas.LOL I like it smothered in Ribbon Cane syrup
