I'm stuffed. It's that time of the year again. Thanksgiving is just around the corner. I start making cornbread early because I get to eat the crusty edges. Tonight it was a stuffed bell pepper that I made when me garden was in and my version of Texas caviar.

Many cornbread recipes call for cooking oil in the batter. That's Yankee cornbread. All great Texas cooks know to heat the oil in the pan before pouring the batter in the pan. It also gives you an indication of the thickness. You want the batter to seek its only level a curl up around the edges.

Don’t use oil in the pan (cast iron only), use bacon grease. It’s way more better if you want a real and flavorful crust. up

Decisions, decisions, you can make it fresh and hide it for a few days to let it dry out. It's been my experience that you will use more stock with dryer cornbread.

What is left over cornbread? I make a meal out nothing but cornbread soaked with butter and honey.

I do the same thing with cornbread and milk, always have. Give me a big bowl or BIG cup of warm sweet or not sweet (yes I said sweet) cornbread, cover that with some ice cold whole milk, give me a spoon, and put up a barricade around my area cause I'm taring that up!

I prefer sweet cornbread, and yes I'm a Son of Texas.LOL

No, but there are Texas implants that will call you a yankee if you like sweet cornbread.

It's not like we're talking about beans in chili, sugar on.. or sous vide'ng a brisket in Texas ( bang), or something more serious. grin We talking corn pone.

I think cornbread is kinda personal. I love sweet cornbread in either pan or muffins. With butter and honey there’s nothing better. Bread and milk is pretty darn good! For having with chili (no beans please!) I’ll take regular, or with green chiles or jalepenos in it. I don’t want the sweet to overpower the beef and spice.

I'm having chili with beans tonight, eating a big ol' bowl. Sister in Law made a pot and I'm all over it.

My baby girl is 6 years old, and her favorite foods are cornbread and bacon. LOL, tonight when I was tucking her into bed she said "Daddy can we please make some cornbread tomorrow, because I LOVE it". Yes Ma'am, we can do that manyana.

I also gave her one of my old deer books tonight, she and her older brother are studying that book pretty hard. Reading, asking questions, and staring at pictures.

Baby Girl said "Dad, I want to shoot this one and I also want to shoot that one.....but you're going to have to help me clean them OK Dad....and also please I want the eyeballs, the horns, and the feet". roflmao

I used black eyed peas, salsa, purple onions, and fresh cilantro from my garden, There are several great recipes on google.
