Not a Texas, or even Southern meal tonight, so bear with me. I like it!! smile So a friend with a restaurant gets fresh fish flown in all the time for his menu. Hard to beat Grade A Yellowfin, especially with pickled ginger and smoking' hot wasabi!! Slivered carrots and celery, with some tasty hummus. Seared in toasted sesame seeds, and not over done at all. The wife only does cows, pigs, and chickens so she settled for rotisserie chicken and a baked potato. All right, this baby was all mine.

I have a confession tho. My rice was a total FAIL, it came out perfect, but I was trying for sticky! Had to switch to a fork at the end. smile

Hell yeah, I'd be in on the sushi. BTW: It looks like you used a long grain rice. That's why it didn't come out like you wanted. Either way, looks like a great meal.

Looks real good, I love Sushi. Nothing like fresh though. Back in the day when I worked a second job as a deck hand on the deep sea boats, when decking on private charters, used to pick out certain tuna, snapper, and other species when caught & bleed them out. Once the fishing was over & we started moving again, it was sushi time. Fresh sushi & fresh ceviche is hard to beat. I miss those days.

Sparta: Yep, used the long grain Basmati style we came to love, from living down in Matagorda area. We generally only eat Basmati or Jasmine, and I figured if I didn't rinse it, would stay sticky enough. Really need a short grain, or white rice like we had in Hawaii all the time, to do it right.

SB: Totally agree. Bleeding is the key to the best fish of any species.

Man that’s hard to beat! looks awesome! I won’t ever try to convince people to like raw fish. If everyone started eating it they would just drive the prices up even more.
