* Instead of oatmeal or breadcrumbs I use crushed fried pork skins which have zero carbs.

First you need two cups of plain crushed fried pork skins. Any brand will do.



Sautee a cup of onions with a teaspoon of minced garlic and thyme. Mix it with3 lb of lean ground beef with pork skins, one egg, a half cup of milk, a tablespoon of mustard and a cup of ketchup, salt and pepper to taste. Mix it up but leave it coarse so the meatloaf has texture and isn't paste-like in consistency. Cook for one hour at 350 on a flat tray to cook the fat out and reduce the calories.



Sauce is a half cup of brown sugar (I use low calorie/ low carb stevia mix), three cups of ketchup, and a tablespoon of powdered mustard (use less or or more of each ingredient to taste, and more mustard powder if you like the bite. The sauce is the key and will have folks coming back for more

Never heard of using pork skins, interesting. Looks great!
