I whipped up something a little different last night, and it dang sure won't be the last time. Leftovers are almost gone already.

Made a spicy Mexican smoked deer sausage stew, with a little Cajun infusion. Browned the sausage, then browned chunks of potatoes in butter, caramelized some onions, minced garlic, then added flour to make a thick dark blonde butter roux. Added one chopped up small can of chipotle peppers in adobo sauce, and seasoned with Pickapeppa/Worcestershire/Louisiana Hot Sauce/and Sazon Goya (cilantro & tomato). Added water and simmered until the chipotle onion gravy was there, excellent flavor and spicy. Then added the sausage & potatoes back and let simmer until the potatoes were done. Served in a bowl over Mexican rice, as always used the fine China. I'll be making this at deer camp this Winter.

Dat looks good!!! I had a Pad Thai tv dinner before I left work because I had to rush around to get my Cowboy Beans on for dinner tonight, will be having street tacos and elotes as well. So I spent my lunch cooking, not eating LOL. Seems [censored] backwards.

Leftover Okra stew, I mean Gumbo.
Love my wife but she goes from one extreme to the other bang Man the first batch she cooked awhile back was awesome, asked her to keep that recipe, did she nope.
Last batch she did not add any Okra and that ain't right, so I nicely asked her to put some in the next batch. I picked a bunch of Okra Saturday and Sunday, the wife said she was going to use them in several different meals.
Sunday evening she cooked the Gumbo and decided to put all of the Okra in it. nuts

LOL, LOVE me some okra. I know that most Cajun traditionalists only put okra in a shrimp & okra gumbo, or any seafood gumbo most of the time....but never put okra in a chicken & sausage or any other kind of gumbo. Not me, I love okra and if I'm making any kind of gumbo it's gonna have okra in it. up

I like Okra fried, baked and some in my Gumbo.
There is so much Okra in here it is like eating Snot soup. When the liquid comes off your spoon it really reminds you of a thick liquid Snot, so much it drowned out the flavor of everything else. I am a huge believer of eating leftovers and not let good food going to waste, but this chit ain't right and it is going into the trash.

Unfortunately, I eat once a day. But tomorrow is my cheat day and we're going to Fuddruckers!

Why do you eat only once a day, is that a diet thing or just the way it is?

Wife and I both get up around 0600. She has to take a bunch of meds, so need to take them with food. I'll make her something, and I just do a pot of coffee every morning. That's why deer hunting is perfect, have to be up for a couple hours before eating, so I usually just do a protein shake and a vitamin. Lunch is light with fruit and meat/cheese somewhere between 1100-1300, and if we are busy we might skip it all together. I like to cook bigger meal between 1600-1700, and we eat during the news on TV.

Stopped by the Chili Dog Stand yesterday for a cheat meal lunch. 2 chili dogs w/onions, no mustard.
