I soaked the chicken in buttermilk for about 8 hours then rolled in seasoned flour. I only fried it for a few minutes on each side and finished oven, I know some of you elders aren’t used to that method. Then I made mashed potatoes with heavy whipping cream of course, butter, fresh garlic(only), salt, pepper, sautéed onions and bacon. Then I topped the mashers with cheese and more bacon, then finished it off in the broiler.

How many of you could still cut a chicken up to fry?

I bought my fryers whole back in the day. My wife world eat the breast, while i ate wing, the drum stick, and thigh. I remember that they cost 23¢ pound?

I'm not huge on fried foods, but that looks like something I could get into. I could probably drown in those potatoes though.

It wasn't only chicken. Beef and pork came bone in, back in the no so goog old days. I remember my daddy processing a side of beef with a meat saw and a butcher knife. I bought T bones back in the day. My wife got the tender I got the strip.

Never heard of baby back ribs because you can't have them without first boning out the loin.

Love it and I still cut up my own chickens. Can't buy chicken out any more because the chickens are no bigger that banties or pigeons at those places. Soak in buttermilk and roll in seasoned flour and corn starch. Big crusty flaky chicken. Lots of crumbles. Make gravy from the grease too.
