So I'll go ahead and cook it today. Should go back and buy another and put it in the freezer. Kroger. Here's how I been doing it: Trim the big hunks of fat off, just the really thick pieces. Cover in Meat Church Holy Cow, and smoked black pepper we order from 1890. Wrap in plastic, back in fridge overnight. Out of fridge at 0400, unwrap at 0500. On smoker at 0600, 250° for five hours. I use a Webber Gas Grill, lid cracked, and a stainless steel pellet tube. Temp stays constant with zero fluctuation and plenty of smoke. Foil wrap at about 1100, in oven, 250° for about 6 hours, temp check, pull and rest, or keep going. It's always great. We'll see how this one turns out.

Not a big call for them here in our neck of the woods, but if you look at a halved or trimmed one they're about $4. A whole will still run you over $3 on sale for a whole. Highway robbery!!!

Sorry to say, a little over cooked compared to the ones I've done in the past. It's still pretty good, ate great on it for a couple of days. The portion for the freezer will be for chopped sandwiches. I rested it in the foil, and the thin part of the flat over cooked. I usually let it rest unwrapped. Lesson learned.
