I like my steaks cooked at home to be rare. I like my steaks from a legitimate steak house to be black n blue. Y’all think this will be over cooked?

Yep, seared on the sides and red in the middle. if I want to fancy it up, I'll put a little blue cheese or Gorgonzola on top.

There’s a shade right in the middle of medium and med-rare that gets my tail wagging. I don’t know if it’s dark pink or super light red. It’s dang hard to describe when we go out. (Which isn’t often) but there’s a 20-30 second window for the ones that know what they’re doing. My wife can tell you how much I like it, based on the noises I make while eating. I actually talk dirty to it when it’s perfect

Never had that reaction to it. I really like the cool blue center the best. I can get very close to this on my home grill, but I have a hard time trusting how the meat was handled prior to purchase. It’s also worlds better with a dry aged steak.

I may be wrong but the outside layer protects the inside. As long as it has been marginally kept cold i dont worry about it and eat it as rare as i like.
