Just put 5 pounds of jalapenos in my 44 inch Masterbuilt smoker and set it up for cold smoking. When the smoke dies, they'll go in the dehydrator. If all goes well, I'll end up with about a half pound of chipotles.

Did you ripen them before smoking? How long did it take for them to turn red?
