Just left-over potato casserole for dinner, but couldn't leave you guys hanging. The wife likes to eat these little single serve cakes, but I always tell her they just aren't dessert.

Took the time at lunch to whip up some easy to make Key Lime pies, and custards. They could chill in the frig, while I went fishing for the afternoon. So easy a caveman (me) could do it. smile

I told you, super easy ('cause I cheat JUST a little). We keep those Keebler graham cracker pie crusts in the pantry, and use them when I don't feel like spending the time to bake my own. I do toast them a little tho. You might be able to get Key Limes down there in Texas, I can't up here so I get the bottled juice in my Kroger store, and use regular limes for the zest. They don't have it in the produce section where regular lemon/lime bottles are, usually find it in the juice section by apple etc. Whole process takes me about 25 minutes... Save the skinned up ones in a ziplock, for my tacos and G&T's. smile

Pre-heat oven to 350 degrees
1 Keebler graham pie crust, and bake for 10 minutes. remove and let cool a little, while you mix ingredients.

2 - 14 oz. cans of sweetened condensed milk
1/2 cup sour cream
3/4 cup key lime juice
zest from 1 regular lime, or 2 small key limes
1 egg to set it a little more, and make more of a custard instead of a gel (optional, my wife likes it this way)

Blend it all up and pour into crust
Bake for 10-12 minutes, do Not brown the top.

Chill 3-4 hours. Use with or without whipped cream.

Hey those crusts are perfect for that pie. They don’t fall apart. Dang that sounds good. It was my grandfather’s favorite pie, as well as one of mine that my Mom made/makes.

Hard to bring stuff home, when you fly. With this dumb virus and the effects on travel, just have to stretch the trip out this year. Heading down for deer season, and bringing the RV this time. Gonna load up with necessities!!!!

BF: Have a niece who just moved back to Midland with her husband. Will see them on the way thru. Spend most of our time in Matagorda with friends, out on West Bay, or go to the deer lease out at Uvalde and Brackettville. We lived in Bay City, kids all went to school there, and I worked at STP for a few years.. Will come down for two weeks in Nov.

Ive got 8 more limes coming on my tree, I juiced 6 I think , a few weeks ago and it made about 1 cup or a little more of juice, goes good in your Tea.

Looks great and I love a good Key Lime pie. There is a restaurant in Addison called Lefty's Lobster and Chowder House that has delicious Key Lime pie.

Mine is simple. I use the no bake, no egg recipe.



World's Best Key Lime Pie Recipe | Allrecipes

Condensed milk, key lime juice and whipped topping are combined, poured into a graham cracker crust ... No baking, no fuss - takes me 10 or 15 minutes to make . ... I made 4 pies and used it instead of one of the sweetened condensed milks.
